  • 125g salted French butter
  • 4 Italian white onions, peeled and sliced thinly
  • 1 bay leaf
  • 100g basmati rice, washed
  • 500g water
  • 500g milk
  • 100g double cream
  • 1 bulb roasted garlic
  • 200g double cream (for Chantilly)
  • Salt to taste
  • Black pepper to taste
  • Olive oil for dressing

Directions

  7. Remove the bay leaf, then blend the soup until smooth using a powerful blender. Strain the blended soup through a fine chinois or fine sieve to achieve a silky, velvety texture.
  8. Preparing the Roasted Garlic Chantilly

  9. Trim the top of the garlic bulb, leaving the root intact. Blanch it in seasoned simmering water for 3 minutes, then refresh in cold water. Wrap the bulb tightly in parchment paper and tin foil with olive oil and a pinch of seasoning. Roast in the preheated oven at 160°C (320°F) for 3 hours until soft and gooey. Let cool.
  10. Remove the garlic cloves from the bulb by squeezing the base, avoiding any skin, and mash into a bowl. Combine with 200g double cream, season with salt and black pepper, and whisk until it reaches a soft whipped cream (dropping) consistency. Keep chilled until serving.
  11. Serving

  12. Ladle the strained white onion soup into warm bowls.
  13. Spoon a dollop of the roasted garlic Chantilly cream on top of each bowl.
  14. Drizzle a little olive oil and add a crack of black pepper over the Chantilly before serving.
