15 Minute Easy Chicken Fried Rice
A quick and delicious chicken fried rice that will elevate your meal. Perfect for busy days!
Ingredients
- 4 cups cooked rice (preferably leftover)
- 250 g boneless skinless chicken thighs, diced
- 4 eggs
- 3-4 green onions, finely sliced (whites and greens separated)
- 3 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 tbsp soy sauce
- 1 tbsp mirin
- 1/2 tbsp chicken bouillon powder
- 1/4 tsp white pepper
- 1 tsp cornstarch
- 2 tbsp neutral oil
- 2 tbsp toasted sesame oil
- Pinch of salt and pepper to taste
Directions
- If not using leftover rice, rinse 2 cups of jasmine rice and cook it with slightly less water than usual for a non-sticky texture.
- Cut 250 g of chicken thighs into bite-sized pieces and season with soy sauce, mirin, cornstarch, neutral oil, and white pepper.
- Crack 4 eggs into a container, add a pinch of salt, and beat well.
- Thinly slice the green onions, separating the whites and greens. Mince the garlic and prepare frozen peas and carrots by blanching them in the microwave with a little water for 1-2 minutes.
- Combine 2 tbsp of soy sauce, 1 tbsp of mirin, 1/2 tbsp chicken bouillon powder, and 1/4 tsp white pepper in a small bowl.
- Heat 2 tbsp of oil in a wok or pan over high heat. Pour in the beaten eggs and scramble until 70% cooked, then remove from the pan and set aside.
- In the same pan, add another 2 tbsp of oil, then add the seasoned chicken. Spread it out and cook for about 2 minutes until browned.
- Once chicken is browned, add the minced garlic and the whites of the green onions, and cook until fragrant.
- Add 4 cups of cooked rice to the pan, breaking up any clumps. Stir-fry for about 1-2 minutes.
- Pour the prepared sauce around the edges of the rice and allow it to caramelize for 20-30 seconds before mixing everything together.
- Add the blanched peas and carrots, and stir-fry for 2 minutes. If rice is too sticky, add a tablespoon of water.
- Add the scrambled eggs back into the pan, breaking them into pieces. Cook for an additional minute.
- Taste the fried rice and adjust seasoning with salt or soy sauce as needed.
- Turn off the heat and mix in the green parts of the green onions and 2 tbsp of toasted sesame oil.
- Serve the chicken fried rice warm, garnished with additional green onions if desired.
