Spaghetti alla Rucoloa

My wife is reading the book "Under the Tuscan Sun" and told me about this simple pasta dish with arugula. I love pasta and arugula so I thought I'd give it a shot.

This dish is so easy to make, save yourself some time and prep the sauce while the pasta is cooking.

Spaghetti alla Rucola

This dish is simple and delicious.

  • 1 large bunch arugula (rucola, washed and torn into large pieces)
  • 3/4 cup heavy cream
  • 2 T butter
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper
  • 1 lb spaghetti
  1. Pasta - Start cooking the pasta to al dente. While that is cooking, prepare the sauce.
  2. Sauce - In a large sauce pan, melt the butter
  3. Set the heat to low and add the arugula. Stir frequently until it wilts. Season with salt and pepper.
  4. Add the heavy cream and parmesean. Simmer over low heat until the sauce thickens.
  5. Drain the past and add it to the sauce pan with the sauce. Mix and serve immediately.

Ingredients

  • 1 large bunch arugula (rucola, washed and torn into large pieces)
  • 3/4 cup heavy cream
  • 2 T butter
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper
  • 1 lb spaghetti

Directions

  1. Wash and tear the arugula into large pieces. Grate the Parmesan cheese. Measure out the butter, heavy cream, salt, and pepper. Bring a large pot of salted water to a boil for the spaghetti.
  2. Cook Pasta

  3. Cook the spaghetti in salted boiling water until al dente, following package instructions.
  4. Prepare Sauce

  5. In a large saucepan over medium heat, melt the butter. Reduce heat to low and add the arugula, stirring frequently until wilted. Season with salt and freshly ground black pepper.
  6. Add the heavy cream and grated Parmesan cheese to the saucepan. Simmer over low heat, stirring occasionally, until the sauce thickens.
  7. Combine and Serve

  8. Drain the spaghetti and add it to the saucepan with the sauce. Toss well to coat.
  9. Serve immediately, topped with extra Parmesan cheese if desired.
