Easy Sausage & Broccoli Rabe Pasta

This is a clippable version of the recipe on Ethan Chlewbowski's Pro Home Cooks website. It's easy and delicious and perfect for a quick week night meal. I always add red pepper flakes to this dish.

A couple of things to note. Buy good parmesean cheese from the cheese section of your grocery store. This is a very cheese forward dish, don't ruin it by using that pre-grated Kraft stuff.

A delicious and easy pasta dish with Italian sausage, garlic, and broccoli rabe, perfect for a quick meal.

Ingredients

  • 2 Italian sausages (skin removed)
  • 2 cloves of garlic
  • 1 bushel of broccoli rabe
  • Salt & pepper to taste
  • 1 box of pasta
  • Parmesan cheese
  • 1 tsp. red pepper flakes (optional)

Directions

  1. In a pot, add the sausages and drizzle in some olive oil. Break up the sausage and let it cook until browned.
  2. Slice the garlic and chop the broccoli rabe.
  3. Remove the sausage from the pot and set aside. Drizzle more olive oil into the pot and add the garlic and broccoli rabe. Cook for about 3 minutes until wilted. Season with salt and pepper and set aside.
  4. In the same pot, add the pasta and pour in enough water to cover. Bring to a boil and occasionally stir.
  5. Grate about 1 cup of Parmesan cheese and set aside.
  6. Once the pasta is al dente, check the water level. Retain about 1/4 cup of starchy pasta water and pour out the rest. Add 3/4 cup of grated Parmesan to the pot and stir until melted and creamy.
  7. Add the red pepper flakes. Add the cooked sausage and broccoli rabe back to the pot and mix. Serve while hot.
